Vegetarian Eating #1- French Onion Soup

Please take note to the change in title today. We can call it vegetarian, but healthy? Perhaps compared to an entire bag of oreos! :) This recipe was requested by one of my favorite people, so I thought I'd toss it up here. I had originally planned to add a healthy desert to it, but we were all too full... Be sure to come back Monday, I'll put "Healthy Eating #5" up here!


French Onion Soup

Ingredients:
3 cups chopped onions
**I've found finely chopped (like the kind from my food chopper) doesn't work well. It mixes with the liquid and changes the consistency of the soup... kinda mushy. Unfortunately frozen doesn't do this dish justice either. You're just going to have to cry it out...**
3 cups water
1/4 cup butter
1 tbsp beef style McKays seasoning
2-3 shakes soy sauce
1/8 tsp celery salt
Herb seasoned croutons
Monterey Jack cheese

Preparation:
Melt butter in stock pot.
Add onions and saute until golden.
Add McKays, soy sauce, water and celery salt.
Simmer for 30 minutes.
Place soup in oven safe bowl.
Float a handful of croutons on top... enough to hold up your cheese
Place slices of MJ cheese on top of croutons.
Place under broiler until cheese is melted... We like the cheese all bubbly and starting to get a little brown.. makes it crispy.... YUMMY!
Serves 2-3

as soon as it gets chilly, we have this recipe about once a month!! It's the best!! The only difference is that I make my own big croutons from a loaf of french bread. Hurry up cold weather!!
