I am afraid that today's recipe is also more of a compilation of ingredients, but it makes my husband the envy of the squadron when he walks into work in the morning with one of these on his plate! As you can see, my boy likes them too! We've had them for breakfast and dessert!

Ingredients:
Croissants
Your favorite fresh tropical fruit, my minimum requirement is pineapple banana and strawberries. I usually add a few of the following as well... mangoes, blueberries, kiwi, raspberries, blackberries and peaches
Fat free French Vanilla Yogurt
Lemon Curd - I prefer store bought, but can have a hard time finding it in the store depending on where we live. I'll include the best recipe I've found for it below. I also found a really yummy key lime curd at a gourmet food store once that was fantastic!
Preparation:
Slice the croissant in half, sandwich like. Place in a preheated oven, cut side down for a few minutes, just to lightly toast. When toasted, remove bottom half from oven and pile on the prepared fruits. Place top of croissant on fruit. Spread Lemon curd on top croissant. Drizzle yogurt on top of that. (Everyone will ask you what the frosting is... the tartness of the lemon curd and pineapple makes it taste super sweet!) Enjoy!
Lemon Curd
8 Tbsp Butter
3 lg eggs
1 cup sugar
3 lemons, juiced & zested
Melt Butter. Add sugar, eggs, lemon juice & zest. Stir continuously over low heat & cook gently until it coats spoon.
(*I am sure you are well aware, but make sure the heat isn’t too high/butter too hot when adding the eggs so they don’t scramble. This is why I prefer store bought. They are more patient than I am!)
Store in Fridge. Will keep 2 weeks. (I usually just make 1/3 of the recipe and it's plenty for us!)

This is a first for me and I have to say my kids will EAT THIS UP!!! What a great idea! Seems like something we could do on a Friday night with a splurge like croissants! :) SO looking forward to trying this one!
I can testify that this is DELICIOUS! Torry served it to us one night for supper, and then the next morning I had another one for breakfast! As beautiful as it is yummy, too!
