Baked Oatmeal

I shared this recipe on facebook tonight and had someone ask for it and since it is one that I have adulterated so badly (wonderfully) from it's original form, I thought I would just transpose it over here for future reference.  It took quite a few attempts at baked oatmeal to find one that my family would be excited about and this is it!

We prefer the tropical version, but you can easily switch out the mangos, pineapples and coconut for the same amount of strawberries, blueberries and blackberries or really whatever you prefer. I would probably leave the bananas and maybe the dates since there isn't any regular sugar in it, only maple syrup. I make this in my dish which is slightly larger than a 9x13 baker. I have veganized the recipe. Feel free to unveganize it if you wish, but we really like it this way. I especially love that I don't have to worry about uncooked eggs and I think the coconut milk adds a really yummy flavor profile to the dish
Baked Oatmeal
Ingredients: 4 c rolled oats 1 c pecan pieces 2/3 c maple syrup, more for serving if desired 2 tsp baking powder 1 tbsp cinnamon (or more... I don't measure this one. ) 3/4 tsp salt 4 c unsweetened coconut milk, the dairy alternative kind you would put on cereal, not the kind in a can 2 lg eggs (I use ener-g egg replacer made to the package directions) 1 tbsp vanilla extract 4 ripe bananas, sliced 10 dates, chopped 1/2 cup of shredded coconut 1 bag frozen mangos (1 lb?) 1 bag frozen pineapple (1 lb?)
Preheat the oven to 375. Spray the inside of the baking dish to prevent sticking. In a bowl, mix together the oats, half of the pecans, the baking powder, cinnamon and salt. In another bowl, mix the milk, prepared egg replacer, and vanilla.
Arrange the bananas in the bottom of the baker. Sprinkle with dates, coconut and mango. Spread the oat mixture over the fruit. Slowly drizzle the milk mixture over the oats. Tap on the counter a few times to get it all settled down. Place pineapple on top, then the remainder of the pecan pieces. Bake 35-45 mins, until golden. We serve it with maple syrup and coconut milk on the side for those who want it.
