Healthy Eating #1

My great friend Laura had a friend who had a friend.... see the trickle down effect here?... who was tired of the same old recipes. She thought that a great way to boost her recipe collection would be to inspire others to do a week long series of blogs on their favorite healthy eats! So sorry, kiddo's, you'll find no mac and cheese here this week! Don't feel too sorry for them, this is pretty much how we eat anyway.

This first recipe is less of a recipe and more of a compilation of things that I find to be especially yummy. Like usual, I found myself in love with a dish that I had at a restaurant and decided that to have it more often, I'd try to recreate it in my own kitchen. Since moving to Yuma, I've been introduced to this wonderful little deli, Kneaders. The one and only thing I've ever ordered from them was so yummy, that it's all I want! At Kneaders, I get this on ciabatta bread. At home, I used the Orowheat multigrain sandwich thins. So yummy! The hard part was figuring out what the sweet yellow sauce was. I think I'm close!

"Wanna Be Kneader's" Cafe Sandwiches

Ingredients:
Bread of your choice
Provolone Cheese (not pictured as I don't care for raw cheese!)
Sliced Avocados
Sliced Tomatoes
Sliced Red Onion
Spring Mix Salad... You know the kind, looks like rabbit food and is SOOO good!
Sauce:
1 part mustard
1 part honey
2 parts low fat mayo

Preparation:
Layer.
Eat.
Smile.

*Disclaimer... Everyone's view of healthy eating is different, so if you're a raw foods only vegetarian or strict vegan, you'll probably think you're having a stroke just at our idea of healthy! :)

I actually read about those thin "buns" a few weeks ago but haven't seen them in our store yet. That looks yummy! Thanks for joining!
